Being Thankful = Big Savings
In July of this year, my husband and I made a commitment to find ways to spend less. Since then I have learned a lot of things that have helped us lower our grocery and household expenses.
In the past few months, I have learned that you can save by using samples, making things last longer, ignoring directions, shopping at the local bread outlet, bringing our own lunch, and even buying coupons on ebay. But the biggest way that I have saved is by learning to be thankful.
Before we started trying to save money, I would rush out to the store whenever I thought we needed something. I often felt stress just thinking about all the things that I thought we needed, but couldn't afford to buy. Just a few weeks after we decided to cut back on expenses, I noticed that I was constantly asking myself, "do we really need that?", "can we get by without that?", or "do we have something else that we can use instead?"
And then I started to think about all the people in this world that don't have even the simplest things that we consider necessary in order to survive. How often do I take things for granted and am not thankful for what I have? Why can't I sacrifice just a little in order to save money and stay debt free?
Here is how we are saving by being thankful:
- Now, instead of going into debt in order to replace my 11 year old vehicle that is losing it's paint and starting to rust, I am thankful that I have a vehicle that I can use while my husband is at work.
- Instead of buying a new computer to replace our ancient, slower-than-cold-molasses computer that still has the old humungous screen that takes up almost the whole desk, I am thankful that I have a way to keep in touch with friends and family.
- Instead of complaining about washing dishes by hand because our kitchen is too small for a dishwasher, I am thankful that I have a home that keeps me safe and warm.
- Instead of worrying because my son doesn't have a pair of "church shoes", I am thankful that he has a perfectly nice pair of sneakers that fit him and doesn't have holes.
- Instead of wishing that we could go out to Olive Garden tonight, I will make a simple meal at home and be thankful that we have food to eat.
- Instead of complaining because it has been over 6 weeks since my last hair cut, I am thankful that I have hair {and that I don't have any grays--yet!}
I still struggle at times to be thankful, so I try to constantly remind myself of what I gain by being thankful. Not only have I saved money, but perhaps the biggest blessing of having a thankful heart is being content with what you have.

Meal Plan Monday: Thanksgiving Edition {with recipes}
This year we are hosting the family Thanksgiving meal. Here's what I'm planning on serving:

Since this is my first time cooking a Thanksgiving meal, I decided I should have a few snacks on hand in case it doesn't go according to plan. If the turkey takes longer than expected or something is overcooked and I have to start over again, I will have something for people to snack on while they're waiting. :)

Herb Roasted Turkey {from Martha Stewart's Thanksgiving Recipes Free Download}
Side Dishes
Fresh Herb and Sausage Stuffing {from Women Living Well}
What you need:
10 cups cubed stuffing bread (near deli)
½ cup butter ( ¼ for sautéing and ¼ to melt over top)
2 cups chopped onion
1 cup chopped celery
1 roll of Italian Sausage
2 Tbsp chopped fresh thyme
2 Tbsp chopped fresh sage
2 Tbsp chopped fresh parsley
2 cups chicken broth
1 cup water
3 eggs
cooking spray
pepper to season
Directions:
- Fry sausage in a skillet; drain. Remove from pan and keep warm.
- In the same skillet, add 1/4 cup butter, chopped onions and celery and cook until tender.
- While the onions and celery are cooking, prepare the herbs by removing the thyme leaves from the stems and chopping the sage and parsley.
- Combine broth, 3 eggs, and water in a medium-sized bowl. In a large bowl, combine stuffing bread, herbs, sausage, and sautéed onions and celery. Add the egg mixture and stir well.
- Place all ingredients into a prepared 9x 13 pan . Melt 1/4 cup of butter and pour over top of stuffing and sprinkle with pepper. Cover with foil and bake in a 350 oven for 25 mins, uncover and bake another 25 mins until lightly browned and cooked through.
What you need:
2 sweet potatoes
4 Yukon Gold potatoes
8 new potatoes
1/4 cup plus 2 tbs. olive oil
1 tsp. dried tarragon
1/8 tsp. salt
1/8 tsp. pepper
Directions:
- Preheat oven to 425 degrees. Peel and cube the sweet potatoes and Yukon Gold potatoes. Scrub the new potatoes and cut into cubes. {Instead of new potatoes, I usually use 3 to 4 red potatoes and peel and cube them.}
- Place the potatoes in a large saucepan. Add enough lightly salted water to cover the potatoes. Bring to a boil and cook the potatoes for 3 minutes. Drain thoroughly.
- Spread the potatoes in a single layer on a large nonstick baking sheet.
- Drizzle the potatoes with olive oil and sprinkle with tarragon, salt and pepper. Roast the potatoes until browned and crisp, about 25 minutes. Serve immediately.
What you need:
1 pkg. frozen or fresh broccoli
1 8 oz. pkg. of grated velveeta cheese
1 tube crushed ritz crackers
1 stick butter, melted
Directions:
- Cook broccoli; drain.
- Put broccoli in a casserole dish and stir in 1 tsp. melted butter and grated cheese.
- Mix the remaining melted butter with the ritz crackers and sprinkle on broccoli and cheese.
- Bake in a 325 degree oven for 30 minutes.
What you need:
One bag of cranberries
3/4 cup white sugar
1/2 cup water
1/2 cup orange juice
2 tsp. orange zest
Directions:
- Rinse cranberries, discard any that look shrivelled or brown.
- Put all ingredients together into a medium-sized pot and heat over medium heat. The skins will begin to open and they may begin to spit.
- Bring to a boil, reduce heat and let simmer about 10 minutes. Most of the berries will pop open and the sauce will be quite "jammy". Let cool at room temperature, then put in the refrigerator. Can be stored for a week or so. Makes just over 2 cups.

Blueberry Pie {One of my aunts, who happens to be a great cook, told me that blueberry pie made with tapioca is much better than with cornstarch or flour. I am using the recipe that is right on the back of the box of tapioca. Since this is my first-ever blueberry pie, I am hoping that it comes out ok!}
What you need:
4 cups blueberries
1/4 cup minute tapioca
1 cup sugar
1 tbsp. lemon juice
1/8 tsp. cinnamon
Directions:
- Mix fruit, tapioca, sugar, lemon juice and cinnamon in a bowl. Let stand 15 minutes.
- Line a 9-inch pie plate with pie crust. Fill with fruit mixture. Dot with 1 tbs. butter. Cover with top crust; seal and flute edge. Cut several slits in crust.
- Bake in a preheated 400 degree oven 45 to 50 minutes or until juices form bubbles that burst slowly. Cool.
What you need:
1 graham cracker crust
1/4 cups + 2 tbs. caramel topping
1/2 cup + 2 tbs. pecan pieces
1 cup cold milk
2 pkgs. instant vanilla pudding
1 cup canned pumpkin
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tub whipped topping
Directions:
- Pour 1/4 cup caramel topping into crust; sprinkle with 1/2 cup pecans.
- Beat milk, dry pudding mixes, pumpkin, and spices with whisk until blended. Stir in 1 1/2 cups whipped topping. Top with remaining whipped topping.
- Refrigerate 1 hour. Top with pecans and drizzle remaining caramel with a fork.

Recipe: Our Favorite Chocolate Chip Cookies
When my husband and I were first married, baking for me was mixing up a box of brownies and putting it in the oven. So when my new husband asked for chocolate chip cookies {his favorite} I knew I needed to learn to bake...and quickly!
I started out using the recipe on the bag of chocolate chips, but they always came out "flatter than pancakes." So I decided to start experimenting and this is what I ended up with:
Favorite Chocolate Chip Cookies
Makes: Approx. 3 dozen
What you need:
3/4 cup butter, softened 1 tsp. baking soda
3/4 cup granulated sugar 1/2 tsp. salt
3/4 cup packed light brown sugar 2 cups chocolate chips
1/2 tsp. vanilla extract
1/2 tsp. maple extract
2 eggs
2 1/4 + 2 tbs. flour
Directions:

- Drop by tablespoons onto ungreased cookie sheet. Bake in a 375 degree oven for 8 to 10 minutes or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
- Enjoy!

Meal Plan Monday: Slow Cooker Edition {With Recipes}
Since there have been some good deals on chicken this past summer and fall, I have been buying extra for the freezer.
Now it's time to clean out the freezer in order to make room for the turkey, so I'm getting out my trusty slow cooker this week to help me make some great meals!
Here's what's cooking in my kitchen this week:
Monday: Melt In Your Mouth Meatloaf {Thanks to Melissa's Bargain Blog for sharing this recipe}
Served with Veggies
What you need:
2 eggs
3/4 cup milk
2/3 cup seasoned bread crumbs
2 tsp. dried, minced onion {I like to grate an onion with a hand grater}
1 tsp. salt
1/2 tsp. rubbed sage
1 1/2 lbs. ground beef or turkey
1/4 cup ketchup
2 tbs. ground mustard {I don't usually buy this...whenever a recipe calls for this, I just squeeze some mustard in}
1/2 tsp. Worcestershire sauce
Directions:
- In a large bowl, combine the first six ingredients. Crumble meat over mixture and mix well {mixture will be moist}. Shape into a round loaf; place in a 5-qt. slow cooker. Cover and cook on low for 5-6 hours or until a meat thermometer reads 160 degrees F.
- In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over the meat loaf. Cook 15 minutes longer or until heated through. Let stand for 10-15 minutes before cutting.

Buying Coupons on Ebay...Tips & Tricks
I did something a few days ago that I once said that I would NEVER do. I bought coupons from ebay. I discovered recently that there are times when buying coupons can save you A LOT of money.
My husband likes the protein bars and will often have one after a workout so when I realized that the Zone Perfect Bars were free after the $1.00 off 1 coupon, I realized that I could get a great deal even if I had to buy the coupons.
I bought fifteen $1.00 off 1 Zone Perfect Bar coupons for $1.85 {includes shipping}. So instead of paying the retail price at Walmart of $.97 each {or $14.55 for 15 bars}, I will be paying about $.12 each {or $1.85 for 15 bars}.
Here are a few tips and tricks that I learned:

- Sign up for an account. If this is your first time buying on ebay, you will need to register for an account. Since most sellers only accept paypal for payment, you will also want to sign up for a paypal account {you can do this during checkout}.
- Search completed listings. Since this was my first time buying coupons on ebay, I searched the completed listings to see what the highest bid was on other similar auctions so that I would know what a fair price range would be. To do a completed listings search, click on Advanced to the right of the search bar. Enter your keywords and then check the box that says completed listings under the search including heading.
- Search active listings. One of the best tips I ever received was to search with the word spelled incorrectly. If a seller misspells a word and doesn't realize it, other people may not be able to find that listing and you may be able to snag a great deal! Example: If you are searching for Ghirardelli coupons on ebay you might try entering Ghiradelli or Ghiredelli in the search bar.
- READ carefully! When I was searching for the $1.00 off 1 Zone Perfect coupons, I noticed that there were also $.55 off 1 coupons in the listings. If I wasn't careful, I could have bid on the $.55 off 1 coupons instead of the $1.00 off 1 coupons. Also check the expiration dates. The Zone Perfect coupon expires on 12/31/10 so I know I have plenty of time to use all my coupons. Read all the fine print. Some coupons may say one per transaction, no more than four like coupons in the same transaction, etc. The seller should have this information in the description.
- Check the sellers feedback. Right before you bid, check the sellers profile and feedback to make sure you are comfortable buying from the seller. If a seller has negative feedback including slow delivery or missing items, you will want to avoid bidding on their listings.
- Avoid "ebay fever". One reason that ebay is so successful is that if you're not careful, bidding can be addicting. It's easy to get caught up in the moment or think you just HAVE to have that item. To avoid spending too much, have a set amount that you don't want to go over and stick to it. Don't get discouraged if someone outbids you and you lose the auction. I have noticed that there are usually several different listings for each coupon.
- Ebay bucks. Ebay bucks is a rewards program where you can earn a percentage on qualifying purchases to use toward future ebay purchases. To see all the details go here. I earned $.03 for purchasing the Zone Perfect coupons, which may seem like a very insignificant amount, but you know what they say, "a penny saved....".
- Send a nice note to the seller. After I won the Zone Perfect Bars, I sent a note through ebay messages to let the seller know that I sent payment through paypal and that I was looking forward to receiving the coupons. This is certainly not required, but is just a nice courtesy. The seller also replied back letting me know when the coupons would be sent.
- Problems? If you didn't receive an item or the item was not in the condition listed, you should first contact the seller and try to resolve the issue with him/her. If you don't get a response or aren't satisfied, you can get help from the ebay Resolution Center.
- Happy Bidding! Now you are ready to jump in and start saving!
