Saving In The Kitchen: Four Ways To Use Bread End-Slices
It all started last fall when I noticed that I was throwing away a lot of food {and money} and knew I needed to make a change.
Our family is a picky bunch--we don't like to eat the end-slices of a loaf of bread; instead we just threw them away. We were wasting a lot of good bread, and I went to work to see if I could find ways to use them.
Now, instead of throwing away the bread end-slices {or heels}, I put them in a freezer bag and put them in the freezer. I keep adding to the bag until it is full and then take them out and thaw them on a baking sheet on the counter.
With a little bit of research {what did we ever do before the internet?} I was able to find some quick and easy recipes to use up those end-slices:
Tip: 1 slice of bread = approx. 1/4 cup of bread crumbs.
Note about the homemade croutons {pictured above}: even though the recipe calls for french bread, these came out really well using the end-slices. The brand of bread that I use has thick end-slices {about the same thickness as a slice of bread}, but this recipe may not work as well with really thin end-slices.

Awefully Easy Chicken {crockpot recipe} w/mashed potatoes - Recipe from Fix-It and Forget-It Cookbook
4-lb. chicken legs & thighs
3 large onions quartered or sliced {optional}
1/2 cup water
14-oz. bottle barbecue sauce
1. Quarter or slice onions and place in bottom of slow cooker. 2. Add water in bottom of slow cooker. Add chicken and pour barbecue sauce over top. 3. Cover; cook on low 8 hours. I usually half this recipe. The sauce is delicious served over mashed potato.

If you had told this former city girl 10 years ago that one day I would be prepping my own chicken, I wouldn't have believed you. Back then the only chicken that I knew existed was the boneless, skinless variety, and "butterfly" certainly had nothing to do with chicken. Come to think of it, I didn't even like to touch raw meat. I have come a long way.
This week I bought a family pack of five bone-in chicken breasts {$.81/lb. after sale and coupon!} and prepared them according to the Five Meals With Five Chicken Breasts post from Parenting the Tiniest of Miracles {yes, I even "butterflied" them!}. That one package of chicken provided us with five meals for the week. Not only can you make five meals, but you can also make your own chicken broth.
These are the meals that I was able to prepare with five chicken breasts:
Chicken Pot Pie
Asian Chicken Stir-Fry With Mixed Veggies
Chicken, Broccoli & Garlic White Pizza
Batter-Dipped Chicken Sandwiches
Chicken Vegetable Soup
To save even more time this week, I used the $3.00 off 3 Pillsbury Products coupon from the 2/27 SS newspaper insert and bought Pillsbury Pie Crust and Pizza Crusts to use in the Chicken Pot Pie,
Chicken, Broccoli & Garlic White Pizza and Sausage Breakfast Pizza.
These meals provided just enough for my family of four with just a few leftovers eaten for lunch {which leaves me wondering what I am going to do when my boys become hungry teenagers! :)}.
I just loved this idea and I hope my experience will inspire you to look for new ways to save money on groceries. I would love to hear your ideas about how you save money in the kitchen!

I first noticed the "five meals with five chicken breasts" idea from Parenting The Tiniest of Miracles and have been anxious to try this myself. With the sale at Hannaford this week and the $2.00 Hannaford meat coupon, I paid about $.81 per lb. for bone-in chicken breast!
Not only can you make five meals, but Jessie also shows you how to make homemade chicken noodle soup and homemade stock out of the chicken bones.

My First Groupon Deal!
Here's how I snagged a great deal through Groupon....
First, I signed up and requested to receive the daily deals by email. The city that I signed up for is far enough away that I wouldn't be able to take advantage of many of those deals, but I thought I might find some good national deals that Groupon offers.
A couple of months later I still hadn't purchased my first groupon, but I got a nice little email from Groupon giving me a FREE $10 credit towards my first groupon purchase. Since there was no way I was going to miss out on that deal, I snatched up the $10 for $20 Bath & Body Works Online groupon using that FREE $10 credit. I paid nothing and got $20 to purchase something online from Bath & Body Works!
I used the groupon to purchase anti-bacterial hand soap which are on sale right now. I purchased six hand soaps for $19.98. I paid a total of $7.34 in tax & shipping and saved $30! I paid about $1.22 each which is more than I would normally pay for hand soap, but I figure I got a great deal on Christmas gifts {and I couldn't resist keeping a few for myself}.
A few things to remember when you purchase a groupon:
Make sure you read the fine print before you purchase a groupon. The universal rules for all groupons are: not valid for cash back (unless required by law), must be used in one visit, doesn't cover tax or gratuity, can't be combined with other offers, and can't be used until the day after purchase. There is also fine print related to each specific deal such as an expiration date and whether or not shipping charges can be included.
Don't forget to purchase a groupon through Ebates or Swagbucks! Ebates gives 3% cash back for a purchase from Groupon or you can earn 3 Swag Bucks when you purchase a groupon through the Swagbucks site. Swagbucks also sometimes features a Groupon as the "Deal of the Day" where you can earn hundreds of Swag Bucks by purchasing that deal.
Groupon is a daily deal site that features national and city deals at a discount of 50-90%. Groupon is able to feature great deals by using collective buying. You can sign up to purchase a groupon, but you will not be able to purchase the deal until a minimum number of members have signed up. Once a minimum is met, the deal is "on" and you will see your groupon in your account usually within 24 to 48 hours after purchase. If the minimum is not met, you are not charged for the deal. If you don't have a Groupon account, you can sign up here.

Ranch Style Baked Beans & Hot Dogs - The recipe that I linked to is similar to the recipe that I use. I don't use the soup mix or the water in my recipe and I only use 2 tsp. of vinegar and 1/2 c. brown sugar. I love this recipe--so easy and no one will know that this dish is not "real" baked beans.

Walmart Has A New Coupon Policy!
Walmart has just recently updated their coupon policy which seems to be very clear-cut and coupon-friendly. The most amazing, I-had-to-read-it-twice statement in the whole policy is, "Coupons may exceed the price of the item. Change may be given or applied toward the cost of the basket purchase."
Here are some of the other highlights of the new coupon policy:
Walmart accepts the following types of coupons:
- Manufacturers' coupons
- Print-at-home internet coupons
- Competitors' coupons that feature a specific item for a specified price {price-matching}
- Soft drink container caps
- Checkout coupons {Catalinas}
- Print-at-home "free" coupons
- Competitors' coupons for dollars/cents or percentage off, buy one get one free, and double- or triple-value coupons
- Only one coupon per item is permitted.
- Coupons must have an expiration date and be redeemed prior to expiration.
- Coupons may exceed the price of the item. Change may be given or applied toward the cost of the basket purchase.
- Walmart only accepts coupons for merchandise that we sell.
- Coupons must be presented at the time of purchase.
- We accept the following with Customer Service Supervisor/Management approval:
- 40 or more coupons
- Any coupon over $20
- $50 or more in coupons in one transaction
